Meal Prep: Crockpot Spaghetti Meat Sauce


How in the heck is it already Monday?! I feel like a broken record, but the weekend flew by and I had so much to do and hardly anything got done. I leave for Pittsburgh on Thursday and have hardly anything packed...YIKES! I made my packing list (OCD I know) and I have some things set aside, but I still have items I need to pick up. I think I need a glass of wine...

ANYWAYS onto meal prep. Between working overtime and trying to do a million things at once I needly majorly easy meal prep. BREAKOUT THE CROCKPOT! It may be July, but I never shy away from using my crockpot. Plus this meal prep took me less than 10 minutes including spiralizing the zucchini- a major win in my books! I know it's not traditional spaghetti sauce, but I don't eat beef and why not mix things up a bit? It's an easy, healthy meal that's packed with protein and can happily feed a family or be used for meal prep!

Crockpot Spaghetti Sauce
  • 1 lb. organic ground chicken
  • 1/2 sweet onion, diced
  • 8 oz. sliced baby bella mushrooms
  • 2 teaspoons minced garlic
  • dried basil, to taste
  • dried oregano, to taste
  • ground black pepper, to taste
  • 14.5 oz. no salt added organic tomato sauce
  • 14.5 oz. no salt added diced tomatoes

Spread the onion at the bottom of the crockpot. 

Layer in half of the mushrooms, ground chicken, spices, tomato sauce, and diced tomatoes. 

Create a second layer with the rest of the mushrooms, ground chicken, spices, tomato sauce, and diced tomatoes. 

Cover the crockpot and cook on high for 4 hours or on low for 6-8 hours.

Cool and refrigerate any leftovers. For meal prep I paired the meat sauce with spiralized zucchini.
