Blueberry Waffles with Strawberry Honey Glaze


Happy Monday everyone! I hope you had a great weekend and are staying warm as this never ending winter continues. 

I am sad to admit I do not have a new crockpot meal to share this week only because I am home on Spring Break. My mom is doing most of the cooking, which it is nice to get a break. However I do have a new really delicious waffle recipe to share with you!

Blueberry Waffles
You Will Need:
  • 1/3 cup whole wheat or all purpose flour
  • 1/2 cup oat flour 
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • pinch of salt
  • 1 egg
  • 1/2 cup milk, almond milk is delicious in the waffles too
  • 1/2 cup fresh blueberries

Combine dry ingredients in a large mixing bowl. 

After combing dry ingredients add in wet ingredients and mix together thoroughly. 

Lastly, add in blueberries and gently fold them into batter.

Be sure to grease waffle maker before use.

Follow waffle makers cook time instructions. When waffles turn golden brown they are done.

Depending on how big you make the waffles you can get anywhere between 2 and 5 waffles.

As an alternative to syrup I topped my waffles with sliced strawberries in a honey glaze.

For the honey glaze
You will need:
  • 1/4 cup honey
  • 4 medium/large strawberries, sliced

Pour honey into a microwave safe bowl and heat up for 55 seconds. 

Carefully remove hot bowl from microwave.

Place strawberries in liquefied honey and use a spoon to mix the honey and strawberries together. Make sure all strawberry slices are fully coated in honey before serving. 

This will be enough honey glaze for two waffles. Double the amount depending on the amount of waffles you make.

Pour honey glaze on top of waffles, serve, and enjoy!

  1. Oh my gosh! I can only imagine how delicious those strawberry-glazed waffles are. It's so unfortunate that I only get to look at them on photos, though. I guess I'm going to have to try it out to actually have a taste. Luckily, you provided us with the recipe. Thanks! Happy eating! :)

And the strawberry glaze is the perfect combination with the blueberries in the waffles...you're making me want them just by talking about them :) If you make them let me know how you like them!
