Chocolate Protein Pancakes- The Best Pancakes I've Ever Had!!

Apparently National Pancake Day is September 26. I really don't know how I was not aware such a day existed. In any case, I am a little over a month, but any day is a good day to have pancakes right?! And guilt free pancakes are even better. 

Recently I posted a recipe for 3 ingredient pancakes and this new recipe is similar, but also very different. This is a recipe for all you chocolate lovers out there!! I wanted a recipe that was high in protein, delicious,
and guilt free. I did my research to see the various recipes for protein pancakes out there and I was surprised to find so many choices! However, I was also disappointed because many of the recipes that were high in protein where high calories and loaded with artificial sugars. These chocolate protein pancakes prove you can have it all in pancakes and it can be guilt free!! 

You will need:
  • 1 banana
  • 1 scoop chocolate protein powder, I used Gold Standard Whey
  • 1 Tablespoon almond flour, can substitute whole wheat flour
  • 1/2 teaspoon baking powder
  • pinch of cinnamon, don't have to include this
  • 1 egg
In a bowl cut and mash up the banana.

Next, add in almond flour, baking powder and cinnamon. Thoroughly mix together.

Then, add in the protein powder. Make sure to fully combine the protein powder with the other ingredients.

Finally, add in the egg. Be sure to totally combine the egg in with ingredients. The batter should be a rich brown color.

Spray a skillet with nonstick cook spray and heat to a low/medium heat.

Pour 1/3 cup of batter onto the heated skillet. Put any add ins in the pancakes you'd like-chocolate chips, blueberries, strawberries, etc.

Once bubbles begin to form on the top of the pancake flip
it and cook the other side for approximately two minutes (may need more or less time depending on the temperature setting you are using). The pancakes will be naturally darker because of the chocolate protein powder, they might appear burnt but they really aren't!

Place cooked pancake on plate and repeat steps with remaining batter. The remaining pancakes will cook faster than the first pancake. I got four medium pancakes but if you make them smaller you could easily get five or six small pancakes.

Serve pancakes hot or allow to cool, cover and refrigerate for later.

Sugar: 22 grams (this may seem high but a banana has over 15 grams of natural sugars)
