Thursday Thoughts #8

1. This will probably be short as I'm getting ready to head out the door to a barre pilates class! My cousin and I started going to a fitness studio near us and we are trying out a bunch of different classes. Last Saturday was piyo, Wednesday nights are always yoga, and today is barre! I'm excited because I've heard to much about this type of class, however, I'm also a horrible dancer (although I do a mean sprinkler). Here's to hoping I don't injure anyone else- or myself.


2. Praise the lord for individual almond butter packs! I carry this giant journalist bag to work and apparently when you have a nut butter problem you carry packs of nut butter in there...this bad boy saved me at work when I was stuck there late. Plus I never say no to almond butter!


3. 10 DAYS UNTIL MY 21ST BIRTHDAY!!!! I'm only a little excited if you can't tell :) Most of my friends have been 21 for months or they are a year or two older than me. They go to Painting with a Twist all the time but guess who could never go? Yup, me! Now that I will officially be able to go we are planning a party- I'm not a good painter but maybe wine will bring out my creative side- or not.


4. The dog that can't be kept out of the lake smells like the lake- YUCK! I don't even know what to do anymore. I give her oatmeal baths (she has sensitive skin) and we have doggie deodorant spray but we just can't keep her smelling nice. I guess until winter rolls around and the lake freezes Cora will just smell like the lake...ugh.


5. When a restaurant does not have gluten free options I make it gluten free! I went out to eat a few days ago and they didn't have any gluten free options, so I modified a greek salad to make it gluten free. I let everyone else eat the chicken skewers and humus as I wasn't sure what was in the humus. It also came with a side of pita bread but I asked them to hold the bread. The salad was still delicious, the beets were so good!


6. Last one before I have to run out the door (semi-late). One of my friends sent this too me and I literally laughed out loud. It's so true! I always come in looking nice and by the end it looks like I got chewed up and spit out!

Crockpot Gluten Free Vegetarian Ratatouille


Fall is typically crockpot season, but I have nothing against using the crockpot in the summer for a quick and easy meal. On the days that I work I have a long commute and I can be gone for 10-11 hours at a time so meal prep has become a life saver. 

This week I made a gluten free and vegan version of Panera's Thai Chicken Salad for lunch and for dinner I made vegetarian ratatouille. I have made a crockpot ratatouille before, but I changed a number of things up. First and foremost I made it vegetarian, I also cut back the amount of tomato paste, and added gluten free veggie dogs for a protein punch.

Crockpot Vegetarian Ratatouille 
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 small sweet onion, diced
  • 1 egg plant, cut into chunks
  • 1 zucchini, sliced
  • 1 summer squash, sliced
  • 2 roma tomatos, diced
  • 4 light life gluten free jumbo veggie dogs, sliced
  • 6 oz. organic tomato paste
  • 1 tablespoon olive oil
  • ground black pepper, to taste
  • dried basil, to taste

Line the crockpot with liner for super easy clean up.

Place all diced vegetables in the crockpot. 

Put sliced veggie dogs on top of the vegetables.

Dump the tomato paste on top of everything and sprinkle the seasonings on top.

Cover crockpot and cook on low for 6 hours or high for 3 hours.

I paired the ratatouille with cooked spaghetti squash, but it's awesome over zoodles too!

Meal Prep: Thai "Chicken" Salad with Sesame Tofu- Vegan and Gluten Free


Happy Monday! How did the weekend seem to go so fast?! It seems like summer is flying by and it's only just begun! 

This weekend I went to my first piyo class with my cousin and it was so much fun! I like how fast paced it was and holy moly there was a lot of booty work involved. By the end my cousin and I were both dripping in sweat and my arms were shaking because I had spent 2 hours at the gym lifting- it was bicep/tricep day- and I did cardio. Needless to say that mistake will not be repeated, haha! 

One of my friends inspired part of this week's meal prep. She's a full vegan and between the two of us going out to eat can be difficult. She is awesome at recreating restaurant dishes, but putting a vegan twist on them.  I used to get Panera's Thai Chicken Salad, but it has gluten containing ingredients and presently I'm avoiding meat- minus fish- so I recreated the salad with tofu! With a little wisdom from my friend on how to cook tofu I am really happy with the results. Thus I present a vegan and gluten free version of Panera's Thai Chicken Salad for this week's meal prep!

Thai "Chicken" Salad with Sesame Tofu
  • 6 cups organic kale, spinach, spring mix lettuce blend
  • 1 red bell pepper, finely diced
  • 1 medium carrot or 7 baby carrots, finely diced
  • 1 heaping cup frozen edamame
  • 1/2 Tablespoon olive oil
  • 14 ounce super firm cubed tofu
  • 1 Tablespoon sesame oil (found in the baking or international aisle)
  • 1 Tablespoon low sodium gluten free tamari (found in the international aisle)
  • 1.5 Tablespoons sesame seeds
  • 1.5 Tablespoons gluten free cornstarch 

Line a baking sheet with tin foil and spray with nonstick cook spray and preheat oven to broil- 500F degrees. 

Place frozen edamame, diced carrots, and diced red bell pepper on baking sheet.

Drizzle olive oil over all of the vegetables.

Put vegetables in oven and broil for 8 minutes. Stir or shake the pan every 2 minutes so the vegetables don't burn. 

When the vegetables are done remove and allow to cool. Turn the oven temperature down to 400F degrees.

Cut open the tofu package and drain the water. 

Dump the tofu onto paper towel or a towel and squeeze the excess moisture out.

While the tofu is drying, in a small bowl whisk together sesame oil and tamari sauce.

Place dried tofu in small mixing bowl. Pour sesame oil/tamari sauce blend over the tofu and gently stir until all the tofu is covered.

Sprinkle sesame seeds over tofu and stir again.

Finally sprinkle cornstarch over tofu and stir until combined- you shouldn't be able to see any of the white powder anymore. 

Line a baking sheet with tinfoil or parchment paper and spray with nonstick cook spray or coconut oil. Evenly dump tofu onto the baking sheet.

Bake at 400F degrees for 25 minutes. Stir the tofu halfway through cooking so it doesn't burn.

While the tofu is cooking get four containers or bowls and place 2 cups of lettuce blend in each. Place 1/3 cup roasted vegetable mix in each bowl/container. 

If you're using the tofu for meal prep allow it to cool before placing heaping 1/4 cup in the containers, otherwise serve immediately.
