Coconut Flour Pancakes with Fruit


As you probably all know by now I love pancakes. I probably post too many pictures of pancakes on instagram, but I am not ashamed of my love for these bad boys. Just looking at this stack of pancakes has my mouth watering. 

I have gotten a few requests to share the recipe, which I posted awhile back (link here). I will share it again though because I have been adding fruit into the recipe because well why not? I always have TONS of fruit around, especially in the summer. You can make these pancakes with any fruit your heart desires- get wild, get crazy, get fruity ;)

Coconut Flour Pancakes
  • 2 Tablespoons coconut flour
  • 1 Tablespoon zero calorie sweetener, I used stevia
  • 1/8 teaspoon (heaping) baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon cinnamon (more or less to taste)
  • 1/4 cup unsweetened vanilla almond milk
  • 6 Tablespoons (or 1/4 cup plus 2 Tablespoons) liquid egg whites
  • FRUIT OF CHOICE- strawberries, blueberries, raspberries, blackberries, etc.

In a small mixing bowl combine the dry ingredients, then add in the wet ingredients and stir until a thick batter forms. It takes awhile for the batter to thicken so be patient and keep stirring.

Spray a skillet with nonstick cook spray and heat to medium-low. 

While the skillet is heating up get your fruit ready. For strawberries I just slice them up into tiny chunks and blueberries I keep whole, but for raspberries and blackberries I like to crush them. Use a knife to cut them into tiny pieces and then use a fork to squish them. You can mix the squished fruit into the batter or drop it in when you dump the batter into the skillet like you would do with chocolate chips. Typically I will add in about 3 Tablespoons of fruit.

When the skillet is hot drop about two tablespoons on batter onto the skillet and add in fruit (if you haven't already). 

Allow the pancake to cook for 1-2 minutes and when the underside turns golden flip and cook the other side for 1-2 minutes. Cook time will vary on your heat setting so keep a close eye on your pancakes. 

Repeat with remaining batter. *Note the photo above shows a double batch of pancakes. 

This recipe easily doubles or triples so you can enjoy a big stack or share with others! 

I love to add toppings to the pancakes. Some of my favorite toppings are: Walden farms pancake syrup, Walden Farms chocolate syrup, Quest Nutrition Quest cravings bar- chopped up, San Franola Granola crumbles, and of course more fresh fruit. The greatest thing about pancakes is you can make them your own!

Thursday Thoughts #13


1. I hate cable companies. Sunday I ended up spending HOURS dealing with them. I don't really watch T.V. I watch a little bit of news in the morning after I workout, and I watch world news, but that's it. There's been problems with cable since the beginning we just never felt like doing anything, but Sunday morning I couldn't get a single channel. Before 7am I had already been dealing with the cable company for over an hour. They finally sent someone to help out, but the person ended up working for almost 5 hours. I ended up missing church and was left highly grumpy. I ate breakfast while I watched the cable guy crawl around on the floor trying to figure out the problem. Breakfast was good- vanilla Siggi's topped with Purely Elizabeth pumpkin fig granola, but I loathe the cable company. All that for one stinking channel...rant over.


2. I don't have class until the late afternoon on Monday so I got to spend some time making pecan crusted chicken for the week. There are so many ways to eat it, but currently I am loving having it in salads. My favorite has been a salad with strawberries, blueberries, and blackberries topped with the chicken. So good! 


3. Maybe it's because I'm back at school or maybe it's the warm weather, either way I have been missing vacation. I miss hiking, exploring trails and finding waterfalls and all the beautiful butterflies. I am 110% wanderlust at heart. If I could have a job that paid (enough to survive) to travel the world I would be gone in a heartbeat. There are so many beautiful places to explore and so many things I want to do. 


4. I am also missing photographing all the beautiful summer flowers. When I was on vacation I spent hours photographing flowers and butterflies because those are two of my favorite things to capture. I also love capturing landscapes, especially in Hawaii. If I actually had time I would love to set up spaces to photograph food, but who has time for that in college?!

I love this quote. I posted in on instagram with the photo from thought #3. I think so often we get caught up in the race of life and living the American dream that we accumulate more stuff (far more than we need) and we forget to enjoy the moment. On vacation I'd often put away my camera and soak up the sunset instead of trying to capture it on film. I've found that the moments that I have put away the camera and lived in the present moment are the moments I cherish the most because memories were made. Life is full of moments, but you can't get a single one back, so live every moment to the absolute fullest because there will never be another one like it. The beauty of a sunrise or a moment of laughter with family is far more valuable than anything you could ever buy.

Power Pak Pudding Fit & Lean Review


I should never be allowed to wander around a health food store unsupervised because I always find so many products I want to try. While stocking up on a few items to take back to school I stumbled across Power Pak Pudding Fit & Lean. I had seen it a few times while scrolling through my instagram feed and it sounded interesting. 

Power Pak Pudding is a gluten free pudding packed with protein and contains 0 grams of sugar. The macros for a single serving cup are 5C/2.5F/15P- 100 calories, kinda crazy right? Just so you know the pudding does contain milk and soy. Power Pak Fit & Lean is much pricier than normal pudding- it runs about $2.99 per 4.5 oz container. You might be able to buy a six pack of pudding cups for that (do they still make those or are those a thing of the 90's?).


I bought the dutch chocolate flavor and cautiously tasted it before putting any toppings on. To be honest, the flavor was very synthetic. I don't fully remember what pudding tastes like, but this definitely tasted fake. To make sure I wasn't crazy I had my mom try some too and she said the same thing. It wasn't a gosh awful taste, but it wasn't something I'd pick again. 

I chopped up a Quest Nutrition Quest Cravings bar and threw it in with the pudding, which definitely helped in the taste department. Side note- I don't know what has changed, but holy moly the Quest Cravings cups have become so much more moist and amazing! 

Overall I'd give the pudding a 3/10 for taste. It's definitely looks like regular pudding so you could easily fool someone there, but taste wise there's a difference. The synthetic taste just didn't do it for me and it's not something I'd buy again.
