30 Day Challenge


Fair warning: you're probably going to think I'm nuts, but I'm ok with that :) You know that little voice in your head that will tell you you need to do something? Sometimes I like to ignore that voice, but I've found that when ignored it only gets louder. 

Recently I have been feeling pushed to do a 30 day plant based diet. It's been in my head and on my heart for awhile now, but I had been ignoring it. I was out running errands yesterday and while listening to the radio station the DJ read a passage from Matthew chapter 6. 

"And when you fast, don't make it obvious, as the hypocrites do, for they try to look miserable and disheveled so people will admire them for their fasting. I tell you the truth, that is the only reward they will ever get. But when you fast, comb your hair and wash your face. Then no one will notice that you are fasting, except your Father, who knows what you do in private. And your Father, who sees everything, will reward you." Matthew 6:16-18

That passage hit me like a ton of bricks. Jesus doesn't say IF you fast, rather he says WHEN you fast. Fasting is something that is required of us in our Christian walk. I had always viewed fasting as centered on food, but it doesn't have to be about food at all. It can be anything that takes your focus off God- food, phones, social media, TV, etc. 

So how does all of this relate? I strongly believe I am being called to fast from my regular diet and focus on plant based foods for the next 30 days. This isn't saying that my current diet is bad, rather I think God has some lessons he wants me to learn throughout this time. After hearing that passage read yesterday I finally surrendered and said, "Ok, I'll do it." 

Starting next Monday, January 11, and for the next 30 days I will be eating a plant based diet. What does this mean? I won't be eating wheat, meat, dairy, or sugar (except naturally occurring ones found in fruits and veggies). I've been gluten free for a long time, so the whole bread thing doesn't bother me and artificial sugar makes me feel sick, but I am definitely going to miss eating salmon and having yougurt parfaits. The one thing I am allowing myself to have is egg whites and hard boiled eggs.

I picked the start date of next Monday because why not kick the week off on a good start, plus this gives me time to meal plan and go grocery shopping. To be honest I'm very curious how this is going to shake out. For one, I'm training for a half marathon and as I've been increasing my mileage I've been getting hungrier, so I'm worried about getting enough protein. And two, the unknown variable has me worried, but also curious. I'm excited to see how my body handles the challenge, but I know it's not going to be a walk in the park. I'm going to document the journey and share my meal prep, training progress, and any lessons I learn along the way (I'm sure there will be PLENTY!). 

Before I embark on this journey I want your help! I'm looking for a gluten and dairy free protein powder that doesn't taste horrible and is affordable! Does anyone have any recommendations? Also, I've already got my meals for next week planned out, but does anyone have any meal ideas? I'm definitely not afraid to try new things, but it does have to be gluten free. Any ideas/suggestions are much appreciated! I can't wait to start this journey and see what the Lord has in store for me!

One Pan Dinner: Turkey Veggie Skillet


It seems like forever since I have posted a recipe! Technically it hasn't been that long, but I haven't posted a meal recipe (besides breakfast) since the middle of December (one pan greek chicken). Since then I've graduated college, completed finals, moved, then the holidays, and here I am. Holy moly right? I'm pretty sure that's the busiest December I've ever had. At least it was crazy busy in a good way though. 

Now it's time to get back into the swing of things. Throughout all the craziness working out has been keeping me sane and I've been eating good, but I haven't had hardly any time to cook, which I've missed like crazy. I am back to prepping meals, even though I don't have classes anymore (that reality has yet to sink in) because it just makes life easier. One pan dinners have become my go to (who doesn't love a super easy clean up?) and best of all it's ready in 30 minutes or less (depending on your veggie chopping skills). It's packed with flavor and veggies and heats up great! 

Turkey Veggie Skillet
  • 1 lb. lean ground turkey
  • 1 Tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 cup sweet onion, diced
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1.5-2 cups green beans, trimmed and cut in half
  • 3/4 cup tomato sauce
  • 1/4-1/2 teaspoon chili powder

In a large skillet heat olive oil to medium. 

When skillet is warm add ground turkey and use a spatula to break it into chunks.

Continually stir turkey to cook evenly.

When the turkey is cooked through on one side add in diced onion and minced garlic. Stir to combine. Cook until onions are golden brown.

The turkey should be done (or close to it) now, so add in diced bell peppers, green beans, and chili powder and stir. 

After stirring add in tomato sauce and stir to combine. 

Cook vegetables until they are tender.

When done cooking, remove skillet from heat and allow to cool for a few minutes before serving.

2015: Top 5 Moments

I'm a little late to the recap party, but hey better late than never right? Instead of doing a giant recap of 2015 I decided to narrow it down to my top 5 favorite moments from 2015. 2015 was such an amazing year for so many reasons, so it was hard to choose just 5! Without further ado here are my top 5 favorite moments from 2015 (in no particular order):


5. I spent much of 2015 chasing down news stories. I got to tell stories from all over Michigan and it was such an honor and privilege to tell those individuals stories. Between spending a summer at an amazing news station and reporting on stories for my college I got to improve my reporting skills and I fell even more in love with the job. Now I just need a job- anyone want to hire this reporter? :)


4. One of the fun adventures of 2015 was spent hiking Picture Rocks and the surrounding area in Michigan's upper peninsula. Hiking is one of my absolute favorite things to do and there was so many hiking trails with gorgeous scenery and waterfalls that I could have spent forever exploring! I highly recommend exploring Picture Rocks, the beauty is seriously unmatched!


3. Another favorite adventure was going to Pittsburgh and seeing Sam and Amanda! These two have been such a blessing in my life and I am beyond grateful to call them friends! Not only have Sam and Amanda been incredible friends, but they're also wonderful sisters in Christ and that alone has been a huge blessing! 


2. This one is one of my favorite memories period. I was blessed enough to spend time exploring Maui with my family in early 2015. I got to escape the frigid Michigan winter and enjoy tropical sunshine, beaches, and LOTS of açai bowls! There were so many incredible adventures on Maui that I can't pick just one moment, but exploring Dragon's Teeth was definitely a highlight of the trip!


1. As 2015 wrapped up one of the biggest moments of my life so far happened- I graduated college (EARLY!)!! It was such a surreal moment and definitely one I will remember for the rest of my life. Graduating was definitely symbolic for me. I closed the college chapter of my life, but it was more than just college. During my time away at school I experienced some of my lowest and highest moments. I discovered new passions, built incredible friendships, gained confidence, and found myself. I am a drastically different person than I was when I started college, but I'm ok with that. The girl that started college was not in a good place. I graduated feeling happier and freer than I have been in a long time. Graduating was a fantastic way to end the year and I can't wait to see what adventures await in 2016! Cheers to a New Year and new beginnings!
