Perfect Pumpkin Bread

There is nothing better than a picturesque fall day, a warm cup of tea, and a slice of pumpkin bread to top it off!! Fall is one of my favorite times of year because there are so many delicious pumpkin recipes to make. 

I love pumpkin bread!! Traditional pumpkin bread is loaded with grains, high in sugar, and contains a LOT of calories. I began to ponder how I could possibly change the ingredients of pumpkin bread to make it healthier without sacrificing flavor. Luckily my experiment worked and I have gotten everyone around me addicted to this delicious and (almost completely guilt free) pumpkin bread. 
Gather your ingredients before you begin to mix
ingredients. It will be easier and help you
mix together ingredients quicker.
You will need:

2 cups Almond Flour
1/2 cup Pumpkin Puree
1/4 cup Organic Agave Nectar (can substitute 1/4 cup honey but it will add more sugar)
2 Organic Eggs
2 tsp. Pumpkin Pie Spice
3/4 tsp. Baking Soda
1/2 tsp. Cinnamon
OPTIONAL:
1/3 cup Chocolate chips


Mix the wet ingredients and the dry ingredients
separately and then carefully combine them.
Preheat the oven to 350 degrees. In a large mixing bowl mix together 1/2 cup pumpkin puree, 1/4 cup organic agave nectar, and the two eggs. The batter will be orange in color and sort of runny, this is ok.

In a separate mixing bowl mix together 2 cups almond flour, 2 tsp. pumpkin pie spice, 3/4 tsp. baking soda, and 1/2 tsp. cinnamon. Lightly stir all ingredients together making sure they are well blended. 

1/3 cup of chocolate chips will add additional
flavor and sweetness for all of those who
suffer from a chronic sweet tooth.
Once the wet ingredients and the dry ingredients have been well mixed separately, carefully add the dry ingredients to the wet ingredients. 

Gently fold the wet ingredients together with the dry ingredients and do not over mix.

Once the wet and dry ingredients have been thoroughly combined, but not over mixed you can add in 1/3 cup of chocolate chips if you desire to. Fold the chocolate chips into the batter without excessively stirring.
Evening out the dough is important
to ensure that the bread cooks evenly
all the way through.
After all the ingredients are combined carefully transfer the dough into a glass bread pan. Spread the dough evenly throughout the bread pan so the bread will bake evenly. Stick the bread into your already preheated oven (350 degrees) and bake for 30-35 minutes depending on the strength of your oven. You will know the bread is done when the edges have a golden brown color, and if you insert a toothpick it should come out clean. 


Nothing beats fresh homemade bread!!
Allow the bread to cool for two hours before slicing it up. You will want to refrigerate the bread to keep it fresh longer, and it can also be frozen. The bread is extremely moist and so good!! It's easy to make and it is the perfect fall recipe. Enjoy!!
