Sweet Salmon Salad


Sorry this post will be short and to the point because classes are crazy right now. But, I have another delicious and quick salad for you!!

  • 4 oz salmon baked
  • 1/3 cup fresh cut pineapple
  • 1/4 cup fresh pineapple juice
  • 1/4 cup strawberries
  • 1/3 cup frozen peach slices
  • 1/4 of an avocado cut into chunks
  • 1/4 cup mandarin orange slices
  • 2 cups Organic Deep Green Blends

Before baking salmon, 400 degrees for twenty minutes, brush salmon with fresh pineapple juice to give it a delicious flavor.

On a plate place two cups organic deep greens blend and set aside.

When salmon is almost half done baking spray a skillet with nonstick cook spray and heat to a medium heat. When the skillet is warm pour in pineapple juice, pineapple, strawberries, and frozen peach slices.

Sauté the fruit until the peach slices are no longer frozen and warm throughout. Continuously stir the fruit until so it does not stick and burn in pan. By the time the salmon is done baking the fruit should be done or close to done.
When the fruit is done add scoop half of it onto lettuce. Next place salmon on salad. Finally, pour the remaining fruit and heated pineapple juice over salmon and salad. Enjoy!
