4th of July Recap

The 4th of July was a picture perfect day! It was in the low 80's and sunny absolutely all day- it was a perfect night for fireworks. 


I started the morning out bright and early at the gym and kicked MAJOR butt!! I did a Katie FitScript bicep and tricep workout, but before hand I did deadlifts and chest presses (among other moves), which I finally got back to where I was before I had to stop for awhile. That combined with Katie's workout made my arms like wet noodles hahaha!


Of course I had to make patriotic themed food for lunch! I made a salmon salad and a yogurt parfait. 

Patriotic Salad
  • 2 cups organic baby lettuces
  • 1/6 cup sliced avocado
  • 4 strawberries, sliced
  • 5-7 raspberries
  • 2 tablespoons blueberries
  • 1 tablespoon vegan crumbled cheese
  • 1 salmon fillet, grilled and shredded


Patriotic Yogurt Parfait
  • 1/2 cup dannon light and fit vanilla greek yogurt
  • 4 fresh strawberries
  • 5 raspberries
  • 6 blackberries
  • 1.5 tablespoons blueberries
  • 1 tablespoon Purely Elizabeth Granola (my fav!)


Of course it wouldn't be the 4th without a good ole fashioned BBQ! My mom grilled turkey zucchini burgers and I grilled watermelon. My family doubted me about the watermelon but it ended up being a big hit!


There was lots of fruit and veggies for dinner. I piled my plate with steamed broccoli, fresh salad, grilled watermelon, and a small turkey zucchini burger. 


We went out in the boat to get a better view of the fireworks. Once I go through those photos I will post those!

Meal Prep: Healthy Turkey Meatloaf


Happy Monday! What an absolutely beautiful 4th of July weekend! It was such a perfect weekend to relax by the lake and play lots of frisbee with Cora. We didn't do anything fancy this year for the 4th- we had a BBQ and watched fireworks on the lake. I got my family to try grilled watermelon and it was a smashing success! The fireworks were great too- there were a lot of really cool shaped ones. I was definitely up way past my bedtime :)

Even though I was up late for the fireworks I still got up early to meal prep. I want to make sure that I have good lunches to eat throughout the week and it saves money by not having to buy lunch. I wanted to make meatloaf, but I make veggie meatloaf. It's chalk full of delicious veggies that make it so moist and just unbelievably delicious! 

Healthy Meatloaf
  • 1 package (20 oz) lean ground turkey
  • 1/2 red or sweet onion, finely diced
  • 1 zucchini, grated
  • 1 red bell pepper, grated
  • 1 medium carrot, grated
  • 1/3 cup Glutino gluten free breadcrumbs (original)
  • 3 tablespoons liquid egg white
  • 1 teaspoon olive oil
  • ground black pepper, to taste
  • minced garlic, to taste

Preheat the oven to 350F degrees.

In a large mixing bowl combine all ingredients. I found it easiest to use my hands, but you can also use a fork. Make sure the veggies and meat are well blended.

Spray a loaf pan with nonstick cook spray or coconut oil. 

Spread the meat and veggies evenly into the loaf pan. 

Bake at 350F degrees for 50-55 minutes.

Slice into the meatloaf to check for doneness, if the inside is no longer pink it is done. 

Allow the meatloaf to cool before storing in the refrigerator or freezer. I cut the meatloaf into 4 large slices, but you can cut the pieces smaller.

4th Of July Round Up

Independence Day is one of my favorite because I LOVE fireworks! There's something so magical about watching them under a blanket of stars. It can be easy to derail on the 4th because there is so much food around, but you absolutely can eat healthy and still enjoy the day! I've rounded up a few easy meals and snacks that are delicious, filling, and healthy so you can make the most of the 4th of July! 

Breakfast:
It's berry (pun totally intended!) easy to be patriotic with these delicious breakfasts! 



It's peanut butter AND banana, need I say more? 


Beat the heat with a patriotic açai bowl that will transport you to the tropics.


I love açai and açai oatmeal with a blob of nut butter and loads of fruit, hello beautiful!

Lunch/Dinner:
Stress free holiday dinners are my favorite kind of dinners. Easy breezy to make and ready in a flash now that's my kind of 4th of July dinner!


Who says you have to have a traditional burger? Swap out beef for lean turkey and ditch the bun for a portobello mushroom cap for a healthy and delicious alternative!


Nothing screams summer more than lemon so say hello to this lemon chicken! It's amazing pan seared and I can only imagine how AMAZING it would be on the grill!


Don't feel like having a heavy meal? No problem! Try this light, yet filling salad packed with berries and guaranteed to make you berry happy (hehe) :)


No cooking required with this bad boy! Whip out that crockpot and ditch the apron to go enjoy a day in the sun! A few minutes of prep and the crockpot does the rest of the work for you. Instead of heavy pasta lighten things up by serving the turkey meatballs over spiralized zucchini. 

Snack/Dessert:
Make room for dessert because these healthy treats are sure to make your mouth water!


Apples may be seen as a fall thing, but apple chips are great any time of the year! Plus apple chips are much healthier (and way tastier) than regular potato chips, and they're totally perfect for a picnic! 


Need something a bit hardier, but don't want to go overboard? Try this double chocolate peanut butter microwave cake for one that is sure to satisfy that sweet tooth! Not to mention for only 105 calories feel free to add some yummy toppings!
